But which one to choose between glycol and ventilated wells? The answer depends on the type of operation.

Glycol wells

In professional artisanal ice cream shops, the glycol counter is the ideal solution : it guarantees superior preservation, keeps the ice cream longer and reduces energy consumption, amortizing the initial investment over time.

The ice cream keeps better and longer.
The lower electricity consumption compensates for the higher initial cost due to the construction quality of the bench.

Ventilated wells

On the contrary, for activities with frequent switching on and off, use on mobile vehicles or catering services, the ventilated counter may be more suitable : it reaches the temperature more quickly, as well as offering a reduced weight and a lower initial cost.

However, if your ice cream business requires frequent switching on and off of the counter or it is placed on a mobile vehicle, then the lower weight and lower initial cost might make a ventilated pozzetti counter the best choice.
